Ingredients
These ingredients will serve two people.
- 4 lamb medallions
- 2 cloves of garlic minced
- Rosemary
- Sea salt
- Black pepper
- Zest of ½ lemon
- Olive oil
Directions
- Mix the garlic, rosemary, salt, pepper, lemon zest and olive oil in a bowl to create a marinade.
- Cover the lamb medallions completely with the marinade and let them rest with the marinade in the fridge for at least 1 hour. If you have time to let this sit overnight, please do - longer is better.
- Heat a pan and sear the lamb medallions in about 6-8 minutes.
- Rest the lamb medallions on a plate covered in tin foil for 5 minutes to keep warm.
- Serve and enjoy.
