This carnivore cake recipe uses monkfruit sweetener, a zero-carb, and zero-fat natural sweetener with almost zero calories. The low glycaemic index makes it keto-friendly and safe for diabetics, too. If you substitute another sweetener, adjust the amount. Monkfruit is sweeter than sugar.

Ingredients
  • 3 x 8 oz blocks of plain, unflavored cream cheese 
  • 1/3 cup monk fruit sweetener 
  • 1/4 cup of heavy whipping cream
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of sea salt

Recipe
  1. Preheat the oven to 320F (~160C).
  2. Use a mixer to mix the cream cheese and sweetener until you have a creamy texture. Add the cream, vanilla and salt. Continue mixing, adding the eggs one at a time, until everything is thoroughly blended and fluffy.
  3. Line a square baking dish with parchment paper, and pour in the mixture. Bake in the preheated oven for 25 minutes or until set, then let it cool completely before refrigerating it overnight, and enjoy your homemade cream cheese carnivore cake!

​2. Raw Milk Carnivore Ice Cream

Yes, you can have ice cream on the carnivore diet! You’ll need a blender or food processor and an ice cream maker, but only four ingredients! Add a tiny sprinkle of chopped, dark chocolate if you’re feeling especially indulgent.


Ingredients
  • 4 cups of raw milk
  • 1/2 cup raw honey
  • 1 vanilla bean, split lengthwise with all the seeds scraped out
  • 1/4 teaspoon sea salt (salt lowers the freezing point for faster and more even freezing)

Recipe
  1. Leave the raw milk in the fridge for 24 hours, so the cream accumulates at the top of the container. In the meantime, put the ice cream maker’s freezing bowl in the freezer.
  2. Once your raw milk has been in the fridge for a day, pour it into a blender. Add the other ingredients, and blend until you have a smooth mixture.
  3. Remove the ice cream bowl from the freezer, pour the mixture into it, and place the bowl in the ice cream machine. Churn until the mixture thickens, and it’s ready to serve.

3. ​Egg & Vanilla Extract Carnivore Custard

Carnivore custard is similar to traditional homemade custard, but this carnivore egg pudding is keto-friendly and only uses three ingredients!


Ingredients
  • 3 whole eggs
  • 2 cups of heavy cream
  • 1 tablespoon of vanilla extract

Recipe
  1. Preheat your oven to 350 °F (~160C).
  2. Whisk the ingredients together in a bowl until you have a smooth mixture. Pour this into four ramekins, 2-3 inches in size, and place them inside an 8×8 baking dish.
  3. Bring 2-3 cups of water to a boil then pour the water into the baking dish. This prevents the custard from cracking or curdling. The water level should be in line with the level of the custard in the ramekins, but don't spill any water into the custard.
  4. Bake for 30 minutes. The custard should be golden brown and firm on top but wiggly underneath. If necessary, leave to bake for a further 10 minutes. Remove from the oven, and leave it for at least 10 minutes to cool and set. It will firm up during this time.
  5. You may enjoy this custard dessert warm, or refrigerate it once it has cooled, and enjoy it cold.

​4. Flavored Butter Coffee

This carnivore diet dessert is more of a healthy dessert beverage. It’s also keto-friendly, and the ideal treat when a couple of friends come over for coffee. 

Ingredients
  • 3 cups hot coffee 
  • 2 tablespoons ghee or grass-fed butter (your choice)
  • 2 tablespoons bovine collagen (good for bone, joint and cartilage health)
  • 1/4 teaspoon of sea salt
  • sweetener to taste to taste
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Recipe
  1. This one is so simple! Mix the ingredients in a blender until frothy, and serve immediately.
